Apple Sandwiches

with peanut butter, granola, vegan overnight oats, chocolate chips (or raisins), coconut

Just grab an apple, slice it crosswise, and then use a large pastry tip to punch a hole through the centre to make an ‘apple bagel’ slice.

Then just layer on peanut butter, granola, VOO, coconut, raisins, chocolate chips, etc…anything you desire!

Sandwich Kebabs

You will need a wooden coffee stir stick, chopstick or wooden skewer.  Choose your fave sandwich items -cheese,buns,chicken,ham lettuce, cherry tomatoes- and arrange them on your stick in your favorite order.  All pieces should be bite size and the sky is the limit for your sandwich creation!

Fajita Southwest Salad Recipe  Adapted from Fajita Chop-Chop Salad


§  3 Romaine Lettuce Hearts, chopped

§  1 Can Chipotle Corn, drained

§  1 Can Black Bean, rinsed and drained

§  1 Red Pepper, chopped

§  1 Avocado, diced

§  1 Bunch Green Onions, chopped

§  2 Roma Tomatoes, diced

§  1 Bunch Cilantro, chopped

§  1 Cup Colby Jack Shredded Cheese

§  1 Package Santa Fe Style Tortilla Strips or Tortilla Chips

§  1 Cup Salsa

§  1/2 Cup Light Sour Cream


1.     Mix together the salsa and sour cream in a small bowl.

2.     Place the rest of the ingredients in a large bowl.

3.     Top with 1/2 of the dressing and toss.

4.       Serve with remaining dressing on the side.

 You can always add 2c cooked chicken to make this a meal!
